Shape the dough into a ball and refrigerate for at least half an hour in the refrigerator - the longer the better! Then distribute some flour on a clean work surface and roll out the dough evenly. A thickness of about 5 millimeters is optimal. lightly dust the stamp with flour and gently press the dough - only then the cookie with any molds gouge (who does it the other way around, the risk that the gouged cookies fray by the pressure of the stamp in the margin).
Important: The colder the dough, the better the shape is retained during cooking. To be on the safe side, represents the gouged spot in the sheet before baking again for a few minutes in the refrigerator.
