Fresh Produce Quality Specifications – Tomato
This document is a guide to the key quality standards to be followed when buying and supplying tomatoes and is the first in a series of fresh produce quality specifications that will be produced and published in the coming months.
Please note that these specifications only reflect what our inspectors and technicians believe to be sound industry standards, generally held knowledge and our expertise having carried out thousands of food quality inspections across the UK food industry over the past 20 years . Where we have directly cited other sources, this will be explicitly cited in the text.
Tomato Size Requirements
These fruits are usually supplied in grades recognized in the fruit trade, with the following sizes being the most common:
Size MMM: 40mm – 47mm
Size MM: 47mm – 57mm
Size M: 57mm – 67mm
Common Pack Sizes
Tomatoes are usually distributed in open corrugated cardboard boxes of 6 kg. They are usually further packaged for distribution within the UK, usually in 1kg bags or small baskets, depending on the industry sector supplied. Cherry tomatoes are commonly found in small 250g baskets of 12 per box.
Common Quality Problems of Tomatoes
We usually divide quality defects into major and minor categories, the former recommending no tolerances and the latter recommending small tolerances. This tolerance is usually within 5% – 10% of the package by weight or quantity.

This product is usually served between 12C – 15C. It should be noted here that in most mixed product distribution scenarios, tomatoes are grouped together with most other fresh produce into refrigerated storage and distribution networks that are expected to operate below 6C.
